I saw a recipe for a chocolate pudding using tofu and I was very skeptical. As I was looking at other similar recipes, one particular brand of tofu kept popping up… Mori-Nu Silken Firm Tofu. The reason for this is the very smooth texture. I tried the same recipe a while back with a generic grocery store brand, it was not nearly as smooth. The Mori-Nu turned out surprisingly great! I used the Ninja Blender (large container) to mix this all together. The melted chocolate and coconut oil give it enough stability when it is chilled to avoid being runny. I hope you all enjoy it!

Ingredients
75g Mori-Nu Silken Firm Tofu (this exact brand is listed in the ketocalc)
10g coconut oil
14g canola oil
8g Bakers Chocolate, unsweetened
10g Walden Farm’s Chocolate Syrup (optional, but will be lighter in color and less intense flavor)
3g Truvia (optional as well, calculate any sweetener you are used to using. Chocolate liquid stevia would work well)
Few drops of vanilla extract, optional
Directions
Melt the chocolate squares with the coconut oil and canola oil in the microwave. Stir until all the chocolate has melted.
Put all of the ingredients, including the melted chocolate & oil into a blender or small food processor. Blend until you no longer see any white lumps of tofu.
Divide into portions and store in an air tight container in the refrigerator.

This recipe is delicious!! so easy and my little keto kid LOVED it. i couldn’t find the chocolate syrup locally (and wanted to make it for his valentines day treat so couldn’t order it) so we just skipped it….i actually thought it tasted yummy as well!
