Peanut Butter Cookies

A quick recipe and post today… I have a lot to do today!  Easy peanut butter cookies that are quick and easy to make.  Cook them in silicone liners of you are worried about the fat spreading.  I cooked them on parchment paper and any fat that cooked out, re-absorbed while cooling.

This makes 3 100 calorie snacks. The protein may be high enough for some people to use this as a meal.

Ingredients

26g butter, room temperature (You could replace some butter with canola oil if needed, this will change the calculation slightly)

15g egg, raw mixed well

14g peanut butter, I used Skippy Creamy Natural

3g coconut flour

3g Truvia

Directions

Pre-heat the oven to 350 degrees.

Mix all of the ingredients together very well.  Drop the batter (it will be very thick) onto a parchment lined cookie sheet in quarter size mounds. Bake for about 10- 15 minutes.

Notes

Reduce the butter for lower ratios.  You will be able to make the traditional “hash” marks on the top with a fork.

  1. These are by far the best Keto Peanut Butter Cookies I’ve made so far. They were super easy and delicious. I adapted the recipe to make @ least 1 dozen cookies and it worked perfectly. I did not have any issues with the butter not adhering to the rest of the batter so I did not loose any fat…awesome! For those interested in making a larger portion here is the list:

    Butter-1 Stick
    Egg-1 Large
    Peanut Butter-4 Tbsp
    Coconut Flour-2.5 Tsp
    Truvia-2.5 Tsp or 2 if you don’t like them that sweet.

  2. I’m so glad to have found the site! My daughter is so excited to try the recipes we’ve found here, but I’m not having too much luck with this recipe. So much of the butter is melting out to the point not enough is reabsorbing. I tried chilling the dough too to see if that would help, but no luck. If you have any hints I’d appreciate it, thanks!

    • Hi Julie,
      I often cook these in the small silicone molds. After they come out of the oven I put the whole thing into the fridge. It helps the butter solidify and stick to the cookies if it didn’t re-absorb. If you want, you could replace some of the fat with ground of macadamia nuts. It will increase the size of the cookies as well. Let me know what you try and if it works out!
