Unless you are from France, you may have never heard of a Financier.  It’s a small plain-looking, understated cake that is usually baked in a rectangle or oval shape.  The outside has a crunch, and the inside should be almost like a firm custard.  A typical recipe would use brown butter, almond meal, cake flour, fine sugar and egg whites.  The browned butter adds a lot of flavor and complexity.  Even the keto version turned out absolutely delicious!

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients

31g butter

10g almond meal

3g coconut flour

3g Truvia

23g egg whites, beat until frothy but not stiff

pinch of baking powder

3-5 drops of almond extract or flavoring

 

Directions

Preheat the oven to 400F

Brown butter is an essential part of this recipe.  Weigh the butter and melt it over medium low heat in a small sauce pan.  Stir it around as it is melting and wait for the butter to start turning a light golden brown.  As soon as you see the color start to darken, remove it from the heat and scrape it into a bowl.  Make sure you scrape all of the butter out of the pan.

Mix together the dry ingredients very well.  Add the egg whites and almond flavoring.  Stir until well combined.  Add the melted butter to the mixture and stir very well.  the batter should be about the consistency of pancake batter.

Lightly spray  a silicone mold (any shape should be fine) or even just a small ramekin and pour the batter in.  Put in the pre-heated 400 degree oven and lower the temperature to 350F.  This will help the outside develop a little crunch.  They should bake until the center is set, time will vary depending on the size of the cake.  If they are small cookie size, start checking after about 5 minutes.  For a larger size 15-20 minutes may be needed.  The cake should look golden brown on the edges and top.

Notes

The ratio can easily be lowered to 3:1 by reducing the butter by 10g.  This will lower the calories to 232.  To lower the ratio further, serve some fruit on the side.

For the 4:1 version, you can also reduce the butter by 10g and replace it with 8g of another oil (like coconut or MCT) if it is needed.
