Approximate Ratio 2.5:1 (3:1 excluding toppings)
Calories 368 (excluding toppings)
1 tortilla (Mission carb balance whole wheat -small size)
2T (28g) olive oil
2T (28g) pizza sauce (Cucina Antica la Pizza cooking sauce)
2T (14g) mozzarella cheese
1/4t herbes of provence
any pizza toppings (spinach, olive, mushroom, zucchini, pepperoni, etc)
Put the tortilla on a pizza pan lined with parchment paper (for easy cleaning).
Spread olive oil all over the tortilla.
Spread the pizza sauce.
Spread mozzarella cheese and sprinkle herb.
Top it with toppings of your choice.
Preheat oven to 350F. Bake for 6-8 minutes.
Let it sit for 2-3 minutes for all the oil to be soaked in.
Thanks Tiffany- I am gonna actually bake it this time – I just got nervous when it poured off the tortilla before baking. I’m still new to this mystery of Keto baking and massive oil absorption! Thank you, will let you know how it goes!
What am I missing here? There no way a tortilla can hold that much olive oil before being cooked – it just slides off all over the parchment, did I do something wrong?
the oil gets absorbed into the tortilla when you bake the pizza… i am not sure what might’ve went wrong for you without seeing the process. maybe you can try brushing the oil on both sides of the tortilla.
