Grilled Flank Steak with Strawberry Balsamic Relish

*I apologize for the humorous spelling error for those who receive the e-mail version.  It is actually a “steak” not a “seat” that I grilled… I’ll blame it on the auto correct!*

I realize this is the type of recipe that sounds adventurous and delicious to some, and just wrong to others!  I happen to fall on the more adventurous side of eating, and I found this to be wonderfully different.  I saw inspiration for this recipe here, I already had all of the ingredients, so I made it right away.  If you’re in the mood for something a little different, give this a try.  I think it is a great summer meal that takes a welcome departure from traditional BBQ flavors that dominate summer grills.  I intentionally kept this recipe at about 250 calories to allow for a side dish or dessert.

Ingredients

63g grilled flank steak, sliced thin

30g fresh strawberries

17g olive oil

5g balsamic vinegar, use a good quality or it will be overly acidic

2g fresh basil, chiffonade

salt/pepper

Directions

Mix the strawberries, olive oil, vinegar and basil together.  Let this sit while you cook the meat. Warm it slightly in the microwave before serving.

Season the flank steak with salt and pepper.  Go heavy with the pepper, it is a great combination with the strawberries!  Grill the meat until it is cooked to your liking.  Cover and let rest about 15 minutes before slicing.

Slice the steak and top with the strawberry mixture.
