You might want to rename this “celery salad with chicken” but we still call it chicken salad anyway. The celery adds a lot of bulk, making this a good size meal in keto terms. I serve some of the oil on the side, but you could easily use mayo for all of the fat mixed into the salad.

65g celery, chopped very small 21g cooked chicken breast, chopped small 22g Hellmann’s Mayonnaise 10g additional oil
Directions
Mix the celery, chicken and mayo together very well. Season with salt and pepper. Serve the additional oil on the side.
