This is a great way to frost a birthday cake, use to decorate cookies, whatever you need frosting for! One of the best parts of this frosting is that it contributes to the protein requirements, rather than the carbohydrate requirements for ketogenic meals. This makes it much easier to combine with a cake recipe (which is often higher in carbohydrate) to make a balanced meal that is not carb heavy. The frosting behaves just like typical buttercream frosting so make sure you don’t let it sit in hot direct light! It will also harden (just like butter) in the fridge, so decorate your cupcake or cake and either eat it right away or let it sit for a few minutes to come back to room temperature.
You can NOT warm this in the microwave or re-whip it after it has hardened. It will separate and break apart. Once a cake is decorated and stored int he fridge it will keep for serving, but like I said, don’t try to re-whip it or heat it.
The recipe is easily modified to be 4:1, 3:1, & 2:1. Any lower and you need so much protein powder, you can never get the “flavor” of it to go away.
