crunchy almond cookies

i discovered this by accident when i was preparing for the beach scene snack for clara… it’s so crunchy!  perfect by itself or even better with ice cream…

Makes 4 cookies (the picture was double the recipe)

Ingredients

1T (6g) sliced almond, unsalted & dry roasted, roughly cut into pieces

1/2T (3g) coconut flakes

1/2t (2.2g) Truvia

pinch ground cinnamon

pinch of nutmeg

1/2t (2.5g) cold butter, cut into small cubes

Directions

Mix all the dry ingredients to gather.  Rub in the butter with your hand.  Make four small piles of the mixture on a baking sheet lined with a parchment paper.  Spread them out to a circle, making sure the ingredients are overlapping, but thinly spread out (about 1.5 inch diameter).

Bake at 325 for 4-5 minutes.

Let it cool completely.
