In 2007 Dawn’s life was was changed forever when her daughter, Charlotte received a definitive diagnosis of Dravet’s Syndrome and her infant son, JT was diagnosed with Hirschsprung’s Disease within the same week. In 2010, Charlotte began treatment with the ketogenic diet and experienced her first seizure free day in over 5 years. Enduring these trials has inspired her to reach out to as many families as possible, helping them understand how to incorporate ketogenic cooking into their everyday lives. Dawn is co-author of “The Keto Cookbook” and has since heard from many families whose lives have been touched by the ketogenic diet. Dawn has now created ketocook.com as a resource for “parents helping parents” find ideas and inspiration for ketogenic meals. Tiffany started making keto meals for her daughter Clara in 2010, after Clara’s diagnosis with Infantile Spasms. While tough at times, managing between the strict requirements of the diet, Clara’s very sophisticated sense of taste, an older daughter whose overwhelming enthusiasm to help is only rivaled by her ability to make a much bigger mess in the process, and a dog who is determined to eat Clara’s leftovers to the detriment of her own waistline, Tiffany is grateful that her hands are being used to heal Clara. Beth Zupec-Kania is a clinical nutritionist in the United States who has dedicated her practice to diet therapies for brain disorders. In 2002 she developed KetoCalculator, a web-based program for calculating ketoegnic diets. Beth has trained over 100 hospitals in 8 countries and has authored many publications regarding diet therapies for epilepsy and other neurological disorders.
Laura is a pediatric dietitian in Washington, DC. The coordinates the Dietary Therapies for Epilepsy Program for Children’s National Medical Center and is deeply passionate about the work that she does and the children she cares for. She is the co-author of “The Keto Cookbook”, along with Dawn.
