I grew up in NJ, at the beach…aka “the Jersey shore”. Don’t laugh, it’s nothing like they make it out to be on TV. However, when I think about summer as a kid, I automatically think about the boardwalk and italian ice (and caramel popcorn, funnel cakes, frozen custard…you get the point!) I thought that italian ice would be an easy recipe to convert to keto, and a treat that any kid would enjoy! The benefit of italian ice is, it’s a little more “special” than a frozen popsicle, yet does not take up as may calories as an ice cream recipe does. Hope you enjoy!
I used the smallest size cup for my Ninja blender (or Magic Bullet )to mix this all together. Freeze this in a silicone mini loaf pan, the flexible sides make it very easy to scrape down the edges which freeze first! You want it to spread out in the pan so you can scrape it during the freezing process to obtain the right texture.

Ingredients
1.5g powdered egg whites + 1 tablespoon warm water
10g oil, neutral flavor like canola, walnut, vegetable
14g frozen blueberries
about 1/2 cup of extra liquid, water plus flavoring & sweetener of your choice or other free beverages you are allowed like Stevita soda, Fruit 2 O, seltzer, ect..
Directions
Use the smallest size cup can can to blend this together. Mix the egg whites with about 1 tablespoon warm water so they dissolve. Blend the egg white mixture, oil, blueberries and extra 1/2 cup of water together in the blender until very well combined.
Pour into a shallow dish. Place the dish in the freezer and set a timer for 15 minutes. After 15 minutes, scrape the mixture with a fork, it should have started to freeze. Break up and big chunks and smooth it out into an even layer. Repeat this step every 15 minutes until the italian ice is completely frozen. Mine was ready to serve in 1 hour. Scrape it into a serving dish and either cover and re-freeze to serve later or serve immediately.
Notes
The cup pictured is one that I found at Michael’s Craft Store. Look in the seasonal sections they have for these. They came with a set of 6 cups, plastic lids and individually wrapped wooden spoons for $1.99!
Are the powdered egg whites necessary? I don’t have any and I need to make something like this for my daughters birthday on Sat. Or do you have an ice cream recipe that is 3.5:1?
