Vanilla Cupcake with Chocolate Cream Cheese Frosting

Cupcake Ratio approximately 2.5:1

Frosting Ratio approximately 4:1

Ingredients

Cupcake (2 regular cupcakes or 6 mini cupcakes)

1/4C (28g) Almond flour

1/12t (0.4g) salt

1/12t (0.4g) baking soda

2 t (9.5g) truvia

1 1/3T (18.5g) butter melted

1 (50g) egg

1t (6g) Frontier vanilla flavor alcohol-free

Frosting

1oz (28g) cream cheese (room temperature)

1/2T (7g) unsalted butter (room temperature)

1t (4.5g) Truvia

1/2t (1.2g) Scharffen Berger natural unsweetened cocoa powder

Sprinkles

I just used the scraps of cut out cookies (easter bunny cookies) that I saved (in the freezer) from before and made them into tiny circles and baked them at 320 for 3 minutes.

Directions

To make the cupcakes, mix all the dry ingredients in a bowl.  Add the wet ingredients to the dry mixture and mix well.  Evenly divide in each cupcake mold lined with cupcake liner or use silicon baking cups.  Bake at 350 for 15-18 minutes for regular cupcakes and 13-15 minutes for mini cupcakes.  Let them cool on wire rack before frosting.

For frosting, mix cream cheese and butter until smooth.  Mix in Truvia.  Mix in cocoa powder.

    • the cupcake recipe (excluding the frosting) has 4.63 total carb. If you make 2 regular size cupcakes, each cupcake will have 2.315g of carb, and if you make 6 mini cupcakes, each will have 0.77g of carb.

    • I use regular Truvia that come in a plastic container. I haven’t come across Baking Truvia yet. If you are referring to the large bag that has a pour spout on one corner, please read the label carefully since I bought one thinking it will be a great bargain, but found out it had real sugar mixed in it.

  1. Hi – is it 1 egg or 2 eggs for the cupcakes? The comment above says to add 1 egg but I wasn’t sure. Thanks! Makign these for my daughters 5th birthday, cupcakes are her favorite and have been a big loss for her once she started the diet!

      Please use just 1 egg. When i copied the posting from my blog, the egg somehow got deleted from the ingredients list. So the previous comment was from when there was no egg on the ingredients list.

  2. Hi! Me again (crazy gal who can’t cook.) I just made these cupcakes and they were really sunken in in the middle. Should I add egg to this? Thank you! The frosting is really yummy!
