Cheese Crackers (egg & nut free)

I made these this morning on a whim, I wasn’t sure if they would stay together, but they did!  They are a little on the crumbly side, but they are strong enough to be picked up by little hands.  You could add some egg to the recipe, I suspect it would make them a little stronger.

Ingredients

26.3 g butter, room temperature

20g cheddar cheese, shredded on the smallest holes of a grater

6g coconut flour

Directions

Blend all of the ingredients together until the butter has absorbed the coconut flour.  Let the mixture sit in the refrigerator for 15 minutes or so to stiffen up a little.  Roll these into little balls about the size of a dime.  Bake them in a 350 degree oven on a lined baking sheet for about 10 minutes.  Let them sit on the baking sheet to cool.  Store them in an airtight container in the fridge.

Notes

This is a great meal for school or on the road.

You could use mayonnaise instead of the butter, or a combination of both.

My favorite containers for keto meals are the 3 cup Sterilite containers.  The seal is great for keeping oil from leaking, the vent is handy for re-heating.  They have many other sizes available and you can find them in grocery stores, Target, basically everywhere!
